The only time I've seen brakes needed at Taledega is when the plate is
turned off.

Also, are you saying you are running 205-207mph overall lap times, or is
that the speed going into turn 3?

If that is overall lap times, then your plate is turned off.  There is
no way to get a 205 lap time with the plate on at Dega.
